It’s early morning in the Italian town of Atina. At home in her kitchen, Maria Fusco is pouring out three creamy shots of espresso while arguing with her cousin, Loreto Borza, about who it was that invented the batter burger.

Maria has it on good authority that it was her mother, Concetta. Loreto thinks Maria needs to be careful perpetuating family legends, especially when there’s a journalist in the room…
